Spanish cured hams: Serrano and Iberico

The Jabugo ham is not classified as a Serrano ham.

There are two main types of Spanish cured ham: the jamón Serrano made from white pigs and the jamón Iberico made from black Iberian pigs, also called jamón de pata negra.

The jamón Iberico is a delicacy and is much more expensive. It only represents a small portion of the hams sold in Spain.

There are three types of jamón Iberico depending on how the pigs have been fed (with more or less acorns). The best one is the jamón ibérico de bellota, made of free-range pigs from the region next to Portugal, and cured for 36 months.

Jabugo is a small town in the province of Huelva, known for their consistently high-quality Iberian hams.
