I just discovered Manchego cheese. What are the different types? What is best to take back home?

El queso Manchego or Manchego cheese is a gastronomic specialty of Spain. Contrary to most cheeses which are made with cow or goat milk, the Manchego is made with the milk of ewes from la Mancha region, in the center of Spain.

There are two types of Manchego cheese: one made with crude milk, the other with pasteurized milk (one more artisanal, one more industrial).

Manchego is a strictly controlled label. All cheeses are cured at least two months. Depending on the curing time after that, there is a large variety of semicurado, curado or viejo cheeses with a more or less sharp or salty taste.

There are many brands of Manchego cheese. As long as you buy a cheese with the label manchego, you will get a good cheese. We would probably tend to recommend a cheese curado made with crude milk for a taste a little pronounced, without being too sharp.
