Chicken Marbella is a signature dish coming from the overwhelming popular 80s cookbook The Silver Palate Cookbook, a spin-off of the trendy take-out food shop with the same name in New York. It is similar to a tagine with prunes, green olives, capers and white wine which is supposed to let marinate overnight.

Although it is difficult to find the exact reason why Chicken Marbella is called so, it is clear that it definitely has Spanish and Moroccan influence. We live in Marbella and have never found a dish on a menu called Chicken Marbella. I have several Spanish cookbooks with similar ingredients, so I am convinced that this recipe is an adaptation of various Spanish and Moroccan chicken recipes.
