ADVANTAGE FORMULA 5 CARROT CAKE

Ingredients

4/5 eggs depending on size

1.25 cups Light Olive Oil

25g The Great Nutrition Company ADVANTAGE sweetener

2.5 cups Cake Flour

2.5 Teaspoons Baking Powder

1 level teaspoon Bicarbonate of Soda

Half cup Walnut pieces

Pinch of Salt (approx ¾ teaspoonful)

2 teaspoons ground Cinnamon


Topping

200g low fat Philadelphia cream cheese

1 to 2 teaspoons Advantage sweetener

Mix together and adjust sweetness to personal taste.

Place in fridge to keep cool, until ready to be applied to the cooled cake.

Watch point: Baking powder is activated by moisture – and deactivated by beating.

If mixing all ingredients takes too long, add a further half teaspoon baking powder and stir in well before adding the nuts.



Preparation

Preheat Oven to 180deg C.

1. Finely grate fresh carrots equal to 3 cups - place in large mixing bowl. Sprinkle with half the Advantage sweetener,plus 1 teaspoon bicarbonate of Soda and mix together.

2. Using a mechanical whisk on highest speed, whip the eggs until light and very fluffy

3. slowly drizzle the oil into the fluffy eggs, whisk on slowest setting.

4. Mix together and sift the dry ingredients (flour, baking Powder and half the Advantage sweetener, salt and cinnamon )

5. Slowly add the dry ingredients to the fluffy egg mixture,stir until fully blended or Mix gently but quickly on lowest mixer speed.

6. Then fold the grated carrot mixture in divided portions into the cake mixture and finally add the broken up nut pieces.

7. Pour into a pre-buttered baking tin - either a loaf tin, square or round tin.

8. Place in oven at 180 deg C for approx. 40 minutes.

9. Test cake readiness with a clean probe then remove from oven to cool in draught–free area. Leave in tin until cool

10. Remove from tin and apply prepared topping like conventional “icing” – optional decoration with whole walnuts.

11. Keep in cool area until ready to serve.
